La qualité de nourriture vendue dans les établissements d’enseignement publique de la commune de Bongor et les risques sanitaires.

Abstract The quality of food consumed by students in schools has been the subject of several debates. In the commune of Bongor, non-compliance with hygiene conditions and the quality of these foods does not attract the attention of the authorities, while the good condition of what students consume can contribute to their good health and facilitate the achievement of good results. The objective of our study is to assess the quality and risks of the food consumed by students in these school environments in the commune of Bongor and to explain the consequences. In order to achieve our objective, a methodology was put in place. It begins first with the methodological approach which is structured around documentary research, then the field survey by questionnaire with students and finally interviews with sellers, heads of educational and care establishments and parents. As for sellers, our respondents are mostly female sellers (96.66%) against only 3.33% of male sellers. Data processing and analysis of the results were carried out using Microsoft Word version 16.22, SPSS version 25 (function 1221-IBM SPSS statistical Base) and Excel. Among these sellers, 75% were aged between 15 and 30 years; 98.33% of them had no training in culinary arts; 13.33% of the food sold was displayed on tables compared to 28.33% on the ground, 75% in the sun and 45% in the open air. 83.33% of this food was not protected and was sold near garbage cans (66.66%), 96.66% was at the mercy of flies and insects.
